Dish: Jollof Rice With Chicken

Ingredients
*4 cups of rice
*1 chicken,
*2 large ripe tomatoes
*1 large onion ,
*1 tin tomatoes paste * half teaspoon thyme,
*half teaspoon curry.
*Ground nut oil ,
*Salt and maggi to taste.

PREPARATION

Step 1. Wash the chicken. Cut into moderate sizes. And boil along with sliced onions, salt and seasonings. Then fry the chicken in hot ground nut oil until brown.

Step 2. Slice onions , tomatoes and ground onions, tomatoes and pepper. Then make a rich stew with tomatoes, onions, pepper and tomatoes paste seasoning with thyme and curry.

Step 3. Parboil rice for about 20 minutes and then wash to remove surplus starch and drain the water.

Step 4. Put the stew on fire and add enough water and add the rice in the pot of boiling stew. Add salt and boil slowly. Boil briskly for about 5-10 minutes, and reduce heat, stir occasionally.
Step 5. With heat reduced, wait till water level is way reduced in the pot of rice, use a spoon or a wooden turner to continuously stir the rice to prevent it from sticking together and setting at the bottom of the pan. This also prevents the rice from burning at the bottom of the pot.

Step 6. Add in a little water if rice is hard. when fully cooked, the colour will be bright reddish.
Serve by putting rice on a suitable plate along with chicken. You can use onions, tomatoes, egg or fried plantain to dress rice. You can as well serve rice with vegetables (optional)..

Dish: NSALA SOUP (WHITE SOUP) WITH SEMOVITA

INGREDIENTS;
Goat meat
Stockfish
Dried fish (properly deboned)
Yam for thickener (cooked and mashed)
Habanero pepper (grinded)
Uziza seeds (grinded)
Utazi leaf (shredded)
Crayfish (grinded)
Seasoning cubes
Salt to taste

PREPARATION;
1. Season and cook meat alongside the stockfish, cook until tender.
2. Add water adequate for soup, add the crayfish, dried fish, pepper and uziza seeds, allow to boil for 5 minutes.
3. Add the mashed yam and allow to dissolve or till soup is thickened to taste
4. Add the seasoning cubes and salt to taste.
5. Add the utazi leaves and leave to summer for 5 minutes.
6. Soup is ready to be served with any swallow of choice.

PREPARATION OF SEMOVITA
1. Bring desired volume of water to boil in a pot.
2. Pour desired volume of semovita into the boiling water, stir and mix well until it is thick.
3. Add a little water, cover pot and heat for 2-3 minutes, stir and mix well until it becomes smooth, firm and consistent

Ingredients
Vegetable oil
chicken
Fresh tomatoes, onions and pepper.
Spices (dried thyme, curry powder,seasoning cube, Salt to taste)

Instructions
Season chicken with, salt and pepper. Set aside In a large pot, heat oil over medium heat, until hot, and then add the chicken and sauté stirring, frequently, any browned bits off the bottom of the pot, until chicken is brown. Blend tomatoes, pepper and onions. Pour the blended tomatoes into the pot of chicken, bring to a boil and let it simmer until tender (depending on the chicken) about 20- 30 minutes, frequently stirring the saucepan to prevent burns.Add all your spices. Bring to a boil and let it simmer for about 20-30 minutes
Serve over warm rice and beans.

Ingredients for Rice;
Rice
Chicken
Fresh Tomatoes
Habanero pepper

PREPARATION
1. Parboil and wash rice and set aside
2. Blend tomatoes, pepper and onions and boil until water is almost dried in order to remove the sour taste.
3. Season chicken with seasoning cubes, ginger and garlic.
4. In a dried pot add vegetable oil and fry the tomato as desired.
5. Add water that will be sufficient to cook the rice
6. Add crayfish, meat stock and salt to taste
7. Add the rice and allow to cook until the whole water is dried.

1. Peel the beans
2. Add the pepper, onions and grind together
3. Add crayfish, seasoning cubes, salt and vegetable oil and mix together.
4. Pour the mixture into the plate and add the boiled egg

INGREDIENTS:
Pumpkin leaves/Ugh leaves (chopped)
Water leaves (chopped)
Goat meat and Shaking
Crayfish (grinded)
Dried Fish
Palm oil
Black grinded pepper
Seasoning cubes
Salt to taste.

PREPARATION
1. Season and boil the meat. Cook meat until tender and there is little or no water left in the pot.
2. Add the crayfish, dried fish, pepper, palm oil and stir into the meat, cook for 5 minutes.
3. Add the water leaves and stir for 3 minutes.
4. Add the pumpkin leaves and cook for 3 more minutes. Check for seasoning and add more salt if needed.
N.B Stir often so it does not get burnt.
5. Soup is ready to be served with pounded yam or any swallow of choice.

PROCESS:
1. I washed my cow intestines very well,
2. then i put them in a pot ,added salt,Maggie,chopped onions ,chopped ginger and garlic,curry and thyme then I cover the pot.
3. I Brought it down after 15minutes and poured the Stock away.
(My cow intestines is ready)

1. I Put some palm oil in a pot,i allowed it bleach for about 30seconds.
2. I then pour my well washed locust beans in the hot oil, i allow it fry for few minutes.
3. before adding my chopped onions then my grated pepper,ginger&garlic with onions etc.
4. I Covered it to allow it cook for a while before adding my other ingredients,
5.I added my maggi and salt,as well as my well chopped cow skin,smoked fish,and my dry fish and my cow intestines,
6. I then allow it cook for awhile before adding my chopped spinach.
Holla my efo is ready.

PREPARATION OF MY SEMOLINA

Water
Semo powder
Salt

1. I Put about three cups of water in a clean pot and allow it to boil for a while,
2. I took a cup out of the boiling water.
3. I then mix a little of semolina powder in a clean bowl,i added about 100ml of cold water and a pinch of salt then i stir well until it finally resolve.
4. I then added the paste to My boiling water as i continue to stair to make sure it doesn't get lumpy,
5. then i cover to allow it boil for 2 minutes before adding some semolina powder to it to make it thick.
6. Then I added a cup of hot water i initially took out to make it cook,while using my spatula to make space in between. Then I start dishing after 2 minutes. My semolina is ready!

1) PREPARATION OF RICE
Pour water into a large saucepan with a tight-fitting lid. Bring to a boil. Mix 1 teaspoon salt into the water. Pour the rice into the boiling water.
Stir once, or just enough to separate the rice Use a wooden spoon to separate any clumps. Don’t over-stir: That can cause the rice to become sticky.Cover the pot and simmer
Be sure the lid fits tightly on the pot. Turn down the heat to its lowest setting. Wash your carrot and green pepper and chop into pieces then pour it on the rice.Let the rice simmer for about 20 minutes, then remove from heat and allow the rice to steam in the pot for another 5 minutes.

2)PREPARATION OF THE SAUCE
Wash your tomatoes,onions and fresh pepper and grate with a manual grater.you can also blend using a blender but do not blend it too smooth.
Heat the vegetable oil in a medium size pot over medium heat. Then, add the grated tomatoes onions.Bring to a boil and immediately reduce to a simmer add your spices,maggi and salt to taste.Simmer for another 10-15 minutes.

3) PREPARATION OF THE SPINACH
Wash your spinach with salt and water then slice into small pieces. Pour the diced spinach into a pot add a pinch of salt then allow it to simmer for a few minutes. Do not add any water.
4) Serve the rice,tomato sauce and spinach with fried plantain and fried chicken.

Recipe: WHEAT PREPARATION

•2 cups Wheat meal

•1litre Water

Preparation

Step 1: Boil the water in a small pot till it starts bubbling then remove about 500mls and set aside

Step 2: Into the pot with the other 500mls left, Stir in the wheat flour with a wooden spatula ( in one direction either clockwise or anticlockwise so it doesn't form lumps ). Do so till you get the semisolid consistency of the normal Swallow (like garri)

Step 3: Add the other 500mls into the wheat in the pot then cover and leave to cook for about 15mins till the water evaporates.

Step 4: Turn once more and mould into any shape

Step 5: Serve hot as a form of swallow with any Nigerian soup
